I love Thai food which is why these are my two favorite recipes to make at home. They are very easy to make and your kids should like them too as they don't have too many complicated flavors. Serve both with steamed rice. If bok choy isn't your thing, then serve stir fry vegetables with the chicken to complete the meal.
Thai Basil Chicken (Recipe Courtesy: My dear friend, Sylvia!) Ingredients 2 TBSP vegetable oil 6-8 cloves of garlic 5 Thai bird chile (or don't add if making for kids) 1 onion finely chopped 1 pound of ground chicken thigh meat finely chopped 3 TBSP fish sauce 1 1/2 TBSP brown sugar 1/2 tsp black pepper 1/2-1 TBSP soy sauce Big handful of Thai basil, stems removed Directions Heat oil in a wok, when hot, add garlic, diced chiles (optional), and stir fry until garlic is fragrant. Add onions and fry until onions are translucent. Add ground chicken and fry until chicken is cooked. Season with fish sauce, soy sauce, and pepper. Cook for another 5-6 minutes. Add basil until leaves are wilted. Taste and add more fish sauce if necessary. Serve with jasmine rice and Siracha for more heat. Optional - add some bell pepper Stir-Fried Bok Choy with Ginger and Garlic (recipe courtesy Food Network) Ingredients 1 tablespoon olive oil 2 cloves garlic, minced 1 tablespoon minced fresh ginger 8 cups chopped fresh bok choy 2 tablespoons reduced-sodium soy sauce Salt and ground black pepper Directions Heat oil in a large skillet over medium heat. Add garlic and ginger and cook 1 minute. Add bok choy and soy sauce cook 3 to 5 minutes, until greens are wilted and stalks are crisp-tender. Season, to taste, with salt and black pepper. Stir Fry Vegetables in Oyster Sauce1 cup mixed vegetables (choose from whatever you like broccoli, cauliflower, baby corn, straw mushroom, carrot, asparagus, onions) 3 cloves garlic minced 1 tbsp light soy sauce 1 tbsp oyster sauce 2 tbsp Vegetable oil 1 tbsp sesame oil ½ cup of stock
DirectionsHeat the oil in a wok over medium to high heat.Add garlic stir until fragrant and golden.Add mixed vegetables and stir.Add some stock to help the veggies cooked quickly. Occasionally stir fry. Approximately 4-5 minutes.When the veggies are slightly cooked, add all seasonings to taste and continue stir fry constantly.Add sesame oil.Remove from the heat and transfer to a serving dish.
