Thai Food made Easy!

I love Thai food which is why these are my two favorite recipes to make at home. They are very easy to make and your kids should like them too as they don't have too many complicated flavors. Serve both with steamed rice. If bok choy isn't your thing, then serve stir fry vegetables with the chicken to complete the meal.

Thai Basil Chicken(Recipe Courtesy: My dear friend, Sylvia!)Ingredients2 TBSP vegetable oil6-8 cloves of garlic5 Thai bird chile (or don't add if making for kids)1 onion finely chopped1 pound of groundchickenthigh meat finely chopped3 TBSP fish sauce1 1/2 TBSP brown sugar1/2 tsp black pepper1/2-1 TBSP soy sauceBig handful of Thaibasil, stems removedDirectionsHeat oil in a wok, when hot, add garlic, diced chiles (optional), and stir fry until garlic is fragrant. Add onions and fry until onions are translucent. Add ground chickenand fry untilchickenis cooked.Season with fish sauce, soy sauce, and pepper. Cook for another 5-6 minutes. Add basiluntil leaves are wilted. Taste and add more fish sauce if necessary.Serve with jasmine rice and Siracha for more heat. Optional - add some bell pepper 

Stir-Fried Bok Choy with Ginger and Garlic(recipe courtesy Food Network) Ingredients1 tablespoon olive oil2 cloves garlic, minced1 tablespoon minced fresh ginger8 cups chopped fresh bok choy2 tablespoons reduced-sodium soy sauceSalt and ground black pepperDirectionsHeat oil in a large skillet over medium heat. Add garlic and ginger and cook 1 minute. Add bok choy and soy sauce cook 3 to 5 minutes, until greens are wilted and stalks are crisp-tender. Season, to taste, with salt and black pepper.

Stir Fry Vegetables in Oyster Sauce

Ingredients 

1 cup mixed vegetables (choose from whatever you like broccoli, cauliflower, baby corn, straw mushroom, carrot, asparagus, onions)3 cloves garlic minced1 tbsp light soy sauce1 tbsp oyster sauce2 tbsp Vegetable oil1 tbsp sesame oil½ cup of stock

Directions

Heat the oil in a wok over medium to high heat.

Add garlic stir until fragrant and golden.

Add mixed vegetables and stir.

Add some stock to help the veggies cooked quickly. Occasionally stir fry. Approximately 4-5 minutes.

When the veggies are slightly cooked, add all seasonings to taste and continue stir fry constantly.

Add sesame oil.

Remove from the heat and transfer to a serving dish.
