This is a wonderful, easy recipe for Caesar Salad. Add grilled chicken or shrimp to make it a full meal.
In a bowl, mix together the mustard, eggs, and garlic. Whisk in the olive oil until the mixture is smooth and creamy.
Add anchovies, salt & cracked peppercorn. Whisk in half parmesan cheese, and lemon juice to taste.
Cut baguette into even cubes. Place melted butter, garlic and salt and pepper into a bowl. Add bread crumbs and sprinkle lightly with Parmesan cheese. Place on grease proof paper and bake until golden brown.
Using your hands, tear off chunks of lettuce from the head, add Caesar dressing, croutons and mix evenly. Finish with shave Parmesan cheese and serve immediately.
- 4oz Olive oil
- 2 Cloves of fresh garlic (minced)
- 1 French baguette
- 2oz Dijon mustard
- 2oz Fresh shaved Parmesan cheese
- 1 Teaspoon of anchovy
- 2 Eggs
- Fresh crack peppercorn
- 2 Heads romaine lettuce
